Chicken Soup Recipe

Do you know that chicken soup has always been a remedy for colds and infections? And you can eat it when you aren’t sick as it helps build your immune system.

I grew up in a home where my granny cooked chicken soup for her family twice weekly.

Her secret that kept my brother and me from getting colds and infections was the number of onions and garlic she added in, and she also made the broth with a whole chicken- chicken feet and bones.

We Greeks like adding rice and many fresh herbs that give the soup a delicate flavour. Also, we finish the soup with a fragment of silky sauce made of eggs, fresh lemon juice and the addition of broth. In Greek is called (avgolemono)

However, I prefer not to add eggs, only fresh lemon.

Over the years, I took my granny’s chicken soup recipe and added some other ingredients, which helped to boost my children’s and now my grandkid’s immune system.

The extra ingredients that I add are fresh turmeric, ginger, spinach, and curry leaves, and I give the soup a creamy texture by blending all the ingredients in a blender except the chicken. Finally, I serve the soup with two tbsp of extra virgin Greek oil and a peal of half lemon.

The very thing that makes this soup so nutritious is the cooking method, which is done in three stages and takes two days to complete. In the first stage, the broth is prepared on a very low heat for about 4-5 hours to soften the connective tissue and extract the collagen from the chicken. In the second stage, I let the broth rest overnight; in the third stage, I cook all the other ingredients inside the broth.

My chicken soup has received many compliments from my family, friends, and customers. During the Covid, I often fed my family and customers this soup, and I firmly believe that it helped many not to catch the various and helped the infected ones recover faster.
